WHAT YOU CAN EXPECT
This is a medium-dark roast with a sweet finish. While it has some mild fruitiness that Ethiopian coffees are known for, the primary flavor is bittersweet chocolate. With this decaf, you get to enjoy some of the same delights of a traditional Ethiopian coffee with none of the effects of caffeine. Great as espresso, also delicious via machine or manual drip.
ORIGIN STORY
Our LEGACY SERIES highlights coffees produced in family-owned farms. I’m excited to feature a DECAF offering that fulfills my commitment to roasting single-origin coffee with a commitment to the people who produce it. This decaf’s from Senna Katta Mountain, a husband-wife owned operation in the Limmu Kossa, Jimma region of Ethiopia. Senna Katta Mountain is the only coffee farm in this remote high-elevation forest area (2,300+ meters above sea level). It’s part of a unique land grant program where the government awarded agro forest plots to farmers who could prove themselves to be good stewards of the land.
Yodit and Solomon’s story began outside of coffee - both are trained pharmacists and they met opening a clinic in Limu Kossa. While their work in community healthcare brought them together, they had always dreamt of building a farm in Limu Kossa. Yodit’s father was an agronomist, so with his help and the couples’ passion for coffee farming, came Senna Katta Mountain. There aren’t many decafs in the marketplace traceable to a single origin, let alone to a single farm plot or specific producers, so I’m particularly excited to feature this one from Yodit and Solomon. My first premium decaf offering, and hopefully not the last.
MORE ABOUT THE SWISS WATER PROCESS
The coffee was processed by Swiss Water Decaf in Vancouver, BC, whose patented method uses only water (and no chemicals) to gently remove 99.9% of the caffeine content. It’s a process well-known for removing caffeine without completely stripping the coffee of its flavor and aroma. There are multiple methods for coffee to become decaf coffee, but the Swiss Water Process is certified organic and 100% free of chemical additives. This is decaf that not only tastes good, but was processed in a way that your body should feel good about, too.
